18、mLIntroductionGrainstorageplaysacrucialroleinensuringfoodsecurity.Thephysiologicalprocesseswhichoccurwithinamassofstoredgrainareaccompaniedbytheemissionofheat,andtheexternalenvironmentalfactors(e.g.hotclimate,ventilation)canalsocausegraintemperaturechangesinbulkstorage.Asaresult,thetemperatureoftheg
19、raincanreachalevelatwhichseriouspermanentdeteriorationinthecommercial,technologicalandfoodpropertiesofthegrainwilltakeplace.Itisthereforenecessarytodetectandmeasureanyoverheatingduringstorageandtotakeimmediateremedialmeasures,suchasventilationandcooling,sincelateremedialmeasureswill,inmostcases,have
20、noeffect.Inbulkstorage,suchdamageisoftenintheinitialstages,localizedandaffectsonlyasmallproportionofthegrainstored.However,suchdamage,althoughlocalizedintheinitialstages,canspreadtootherregionsofthestoredgrainifnotcheckedintime,easilyresultinginlarge-scalemildewcontaminationandpestinfestation.Thecon
